Pacific NorthWest Salmon Burgers!

1 lb salmon, broken up very small, you can use leftover or cook a couple steaks up to use.
1/2 c. black beans, drained, rinsed and mashed up
1 small clove garlic, finely chopped
2 T. white wine]
1/4 t. cayenne pepper or flakes
2 t. ponzu sauce
2 T.  extra virgin olive oil or the oil you have
2 T. finely chopped giner or 1 t. ginger pd
3/4 c. vidalia onions or what you have or 1/4 c. dehydrated onions
zest of 1 lemon
freshly gd. pepper
pinch of salt

Mix all ingredients together in a large bowl. Form patties by hand. About 3/4 inch thick.

Over midium heat, heat olive oil. Cook patties 5 minutes on each side or until golden.
Serve with a whole wheat bun, brown rice and a side of salad.

Crusty Bread Boat w. Crab and Artichoke Spread!

1 french bread or sour dough long loaf, made or bought
1 pkg (3 oz.) cream cheese
2 T. mayo
1 T. white wine(i do leave this out if i dont have it) and worcestershire sauce
1/4 t. crushed red pepper flakes
1 small clove garlic, finely chopped
1 c. shredded asiago cheese( if i dont have i use english cheese)
1 can (14 oz. ) artichoke hearts, drained , chopped
6 oz. crab meat (real crab or the imitation kind)
1 T. chopped fresh parsley

1. in a med. microwavable bowl, mix all ingred. except parsley and bead, set aside.

2 cut 1 inch from top of bread. Cut top into 1 inche piece; place in serving basket. With sharp knife,cut around inside of loaf, leaving 1/2 inch thinck sides. Remove bread, leaving inside of loaf hollow. Cut removed bread into 1 inch pieces; place in serving basket.

3. microwave cream cheese mixture on med. for 3 to 4 min. stirring twice, until hot. Spoon hot mix into hollwed out loaf. Sprinlke with parsley. serve spread with bread pieces.

Oregon Crab Cakes!!

Oregon Crab Cakes!
we catch a lot of crab this time of year and always looking for a good
crab recipe, heres one we like!

2 tablespoons canola oil
1/4 c. red onion
1 stalk celery, finely diced
1 pound lump crabmeat
2/3 cup mayonnaise
1 teaspoon Dijon mustard
2 tablespoons chives, finely minced
2 tablespoons parsley, chopped
5 cups panko bread crumbs(about)
Salt and pepper, to taste
1/2 c. flour
3 eggs, beaten

Heat oil in a sauté pan. Add onions and celery and sauté until onions
is translucent. Remove from heat and set aside.

In a large bowl, mix crabmeat, mayonnaise, mustard, chives,
parsley, and 1 cup panko with the onion/celery mixture.
Add salt and pepper to taste. Form into 2-inch cakes.

Roll cakes first in flour, then in beaten eggs, then in
the remaining 4 cups of panko, each time shaking off excess.
Heat oil, and sauté the crab cakes until golden brown.
Drain on paper towels.

make a nice sauce for the crab cakes! and enjoy!

Shrimp Stir-Fry w/ Lemon Rice!!

Shrimp Stir-Fry with Lemon Rice
*this is very good!! a whole meal!

Prep: 15 min, Marinate: 15 min, Cook: 20 min.
• 1 cup chicken stock
• 1 cup water
• 1 cup long grain rice (i use whatever rice i have)
• 3 Tbs. lemon juice
• 2-1/2 Tbs. cornstarch
• 1/2 cup cold water
• 2-1/2 Tbs. soy sauce
• 2-1/2 tsp. sugar
• 1 Tbs. curry powder
• 2 Tbs. peanut oil (i use peanut when i have it but really any oil will do)
• 1 lb. medium shrimp, peeled and deveined
• 1 Tbs. plus 1 tsp. dry sherry or chicken stock
• 2 tsp. Oriental sesame oil (i use just plain sesame oil)
• 6 ounces snowpeas\cooked
• 2 cloves garlic, minced
• 3 scallions, thinly sliced
Combine stock and water in a saucepan over medium-high heat. Stir in rice and pepper to taste and bring to a boil. Immediately reduce heat to low. Cover and simmer 20 minutes, or until rice is tender and liquid is absorbed. Remove from heat and let sit 5 minutes, covered. Sprinkle lemon juice over rice and fluff with a fork. While rice is cooking, dissolve 1-1/2 Tbs. cornstarch in 3 Tbs. cold water in a bowl. Add half the soy sauce, 1 tsp. sugar, curry powder and half the peanut oil. Mix thoroughly. Stir in shrimp and toss to coat. Marinate 15 minutes. Combine remaining cornstarch and cold water with sherry, sesame oil, remaining soy sauce and remaining sugar in a jar with a tight-fitting lid. Shake vigorously and set aside. Heat remaining peanut oil in a wok or heavy nonstick skillet over high heat. Stir-fry snowpeas 2 minutes, or until almost tender. Discard all but 2 tsp. oil from skillet. Add shrimp, marinade and garlic and stir-fry 1 minute over high heat. Add soy sauce and cornstarch mixture and sauté 1 minute, or until sauce begins to thicken. Remove from heat. Stir in scallions. Serve over rice.

Sesame Green Beans

Prep: 5 min, Cook: 10 min.
• 1 lb. green beans, trimmed and cut into 1/2 inch pieces
• 2 Tbs. sesame seeds
• 2 Tbs. soy sauce
• 2 tsp. Oriental sesame oil (again i just use plain sesame oil)
• 1/8 tsp. nutmeg
Place green beans in a steamer basket over boiling water. Cover saucepan and steam 8-10 minutes or until almost tender. Heat a heavy nonstick skillet over medium high heat. Add sesame seeds. Shake skillet constantly until sesame seeds are golden. Reduce heat to medium low and stir in soy sauce, oil and nutmeg. Add green beans and toss.

My Smoked Salmon!!


My Smoked Salmon!!
its salmon season here so heres what i do with some of the salmon we catch!

catch 25 lb. salmon!
fillet it
cut up in 4-6 inch pieces long , about 2-3 inches wide
set a very large bowl on counter
put in:

2 c. brown sugar
2 c. white sugar
1/4 c. kosher salt or normal salt
mix fish pieces all up in it! coating very good!

next:
pour about 4 - 6 c. of teriyaki sauce(scroll down) on top just to cover
mix up real good with hands!
cover and put in frig overnight.

next morning:
take the pieces out of brine and rinse
have smoker all ready to go
set salmon pieces on racks
mix:
4 T. honey
1/2 c. teriyaki sauce

spread on fish and sprinkle with some fresh pepper!

put in smoker for required time!
